The Menu: Butternut Squash Soup with Fall Salad

Paired with Unoaked Chardonnay & Estate Pinot Noir

Ingredients:

1 large butternut squash, cut in half, seeds removed
3 large apples
2 tablespoon unsalted butter
1 yellow onion, small diced
1 bunch thyme, chopped
2 bulb fennel
2 cups apple juice
4 cups vegetable stock
2 tablespoon crème fraiche
1 head radicchio
1 package arugula, washed
2 oz chevre
2 tablespoon cider vinegar
2 tablespoon maple syrup
2 tablespoon Dijon mustard
4 tablespoon olive oil
